Best Vegan Tofu Vegetable Stir Fry Recipe

Stir fry is the heart of Asian cuisine. You can never go wrong with throwing some vegetables you may have no use for or even vegetables you bought specifically for this dish, either way it is always delicious. Here is our very own Chef Petersen's Tofu Vegetable Sir Fry Recipe! 
Ingredients:
7-8 ounces firm tofu, pressed and cut into 1” cubes
1 bell pepper, trimmed and cut into diamonds
1 large carrot, peeled and sliced into thin rounds
1” piece of ginger, peeled and diced
3 scallions, sliced
Flat noodles or Ramen noodles
1/2 cup vegetable oil
1/2 cup soy sauce
2 Tbs. maple syrup
1/4 cup lemon juice or orange juice
2 Tbs. sesame oil
2 tsp. cornstarch
  1. Wash and prepare all vegetables
  2. In a small bowl whisk together the soy sauce, maple syrup, citrus juice, 1 Tbs. of sesame oil and the cornstarch until the cornstarch is dissolved.
  3. Heat a pot of salted water to a boil for the noodles.
  4. Heat 1/2 cup vegetable oil over medium-high heat.  Fry the tofu in batches and transfer to a cooling grate or onto paper towels.  Reserve.  Wipe out the pan.
  5. In the same skillet or a wok over medium-high heat, warm the remaining sesame oil.  Add the ginger and scallions, and cook 1 minute.  Add the red pepper and cook, tossing constantly, 3 minutes.  Stir in the carrots and cook 1 minute more, then add the prepared sauce and tofu.  Let simmer 1 minute until the sauce thickens.  Stir to coat and turn off the heat.
  6. Cook noodles as directed and serve immediately.
